I made these last night, they were very good. A little bland (I think I would mix up the middle of the burrito more and maybe add salsa?)
I used tortillas from Costco where you heat them up.

I am on a quest to find healthy, delicious and easy meals that my family will eat. Oh, and quick too!
This seems to be a tall order with a fish-eating vegetarian (me), a meat-eating, vegetable hating, southerner (my husband) & a picky toddler (my daughter). Luckily my baby is not eating much table food yet!
I also have the added bonus challenge of cooking dinner mostly alone with two young children underfoot, so I am trying to find meals that are super-quick or make-ahead.
