Leftover Buttermilk?

Last week I had a lot of leftover buttermilk. I made a double batch of apple cinnamon buttermilk pancakes, but I still had some leftover. I found this buttermilk blueberry muffin recipe and made it yesterday. The muffins were delicious and definitely worth making again!

Menu Plan Monday (week starting 8/23)


Monday: Spinach Lasagna (x2 I am taking one to a friend who just had a baby) + rolls and salad
Tuesday: Salmon Burgers recipe is here + Oven "Fried" french fries, I am going to try this recipe + Veggie
Wednesday: BBQ Baked Lentils + Brown Rice, this is a new recipe found here + Asparagus
Thursday: Leftovers
Friday: Fish + Challah + Salad

Menu Plan Monday (week starting 5/17)

We are trying out a CSA for 10 weeks so I have a lot of vegetables to use up this week, including cabbage!

Monday: Russian Pirozhki (recipe found here)

Tuesday: Homemade Pesto & Pasta with Sauteed Swiss chard as a side

Wednesday: Calzones with this leftover pizza dough
I use the pizza dough and then add sauce, cheese and a veggie, usually spinach. My kids love these!

Thursday: leftovers or beet pancakes for dinner. For beet pancakes, take your normal pancake recipe and use a little yogurt or cottage cheese in place of some of the milk and add a 1/4 cup of roasted pureed beets. They are really good and good for you! I got the idea from Deceptively Delicious.

Friday: Fish + homemade challah

Healthy & Yummy Crumb Cake?

I recently found two different recipes for "light" coffee cakes. I love a classic crumb cake so I am excited to try these out.

This first one, from Cooking Light, looks good and I will hopefully have time to make it this week.

This other one, from All You, is a blueberry crumb cake and it also looks delicious. I will save it for later this month. I need to go to Costco to get their frozen berries. I love them for baking and smoothies!

Salmon Burgers

Take one 6 oz can, add one egg, 1 tsp dijon mustard, approx 1/4 cup breadcrumbs, 1/4 cup chopped onion, and some lemon juice.

Mix all together, form two patties about 1/2 in thick. Cook in pan with a little bit of oil for 4-5 minutes per side.

Finally good salmon burgers! The recipe can be played with a lot in terms of spices...

Butternut Squash Muffins

I have tried to get my family to eat butternut squash, I think it is delicious, they do not. They loved these muffins though. I wish I had pictures, but we ate the entire batch in less than 24 hours.
When making the muffins be sure to note the comments, 1/2 pound of puree=1 cup. I roasted the squash in the oven along with a yam while we were eating dinner. It was much easier than peeling and chopping and I *think* it maintains more nutritional value.
