Leftover Buttermilk?
Last week I had a lot of leftover buttermilk. I made a double batch of apple cinnamon buttermilk pancakes, but I still had some leftover. I found this buttermilk blueberry muffin recipe and made it yesterday. The muffins were delicious and definitely worth making again!
I am on a quest to find healthy, delicious and easy meals that my family will eat. Oh, and quick too!
This seems to be a tall order with a fish-eating vegetarian (me), a meat-eating, vegetable hating, southerner (my husband) & a picky toddler (my daughter). Luckily my baby is not eating much table food yet!
I also have the added bonus challenge of cooking dinner mostly alone with two young children underfoot, so I am trying to find meals that are super-quick or make-ahead.
